Purchasing & Delivery Information

How Purchasing Our Bulk Beef Works

Buying beef in bulk is one of the most rewarding and cost-effective ways to feed your family, but the process looks a little different than a standard grocery store run. At Trejo Family Ranch, we believe in being upfront and transparent, so here is exactly how your beef goes from our family ranch in Valley Springs, California to your family freezer.

Step 1. Secure Your Share with a Deposit & Receive a Cut Sheet

Whole Beef Deposit: $750
1/2 Beef Deposit: $500
1/4 Beef Deposit: $350

To reserve your beef, you will place a non-refundable deposit through our website. This secures your share for our upcoming harvest cycle and allows us to schedule your processing slot.

Once your deposit is placed, you will also receive a cut sheet to fill out. This allows you to choose how you would like your beef processed, including steak thickness, roast sizes, ground beef packaging, and other custom preferences. All our beef is cut to a 1” steak thickness. Custom steak cut thickness is available through the cut sheet.

If you are a first-time bulk beef buyer or would prefer a simple option, we also offer a standard cut option. This is a great choice if you are unsure how to complete the cut sheet or would like a well-rounded selection of popular cuts.

Step 2. Harvest & Hanging Weight Calculation

Once the animal is harvested, it is weighed before processing. This is called the hanging weight, and it is the standard industry baseline used to calculate your final price.

We offer whole, half, and quarter beef shares based on hanging weight. Your final total will depend on the exact hanging weight of your share, minus the deposit you already paid.

The Starter Ranch Pack — Quarter Beef: $10.25/lb hanging weight
The Family Ranch Pack — Half Beef: $10.00/lb hanging weight
The Legacy Ranch Pack — Whole Beef: $9.85/lb hanging weight

Your final total will depend on the exact hanging weight of your share, minus the deposit you already paid.

Step 3. Final Payment & Processing:

After harvest, your beef is processed into individual cuts, packaged, and prepared for your family. Once we receive the final hanging weight and processing details, we will send your final invoice with your deposit applied toward the balance.

Once the final invoice is paid, your beef will be ready for pickup or delivery.

Cut Sheet Instructions

After placing your beef deposit with Trejo Family Ranch, you will receive a cut sheet to complete before processing.

This sheet lets you choose how you would like your beef cut and packaged, including steak thickness, roast options, ground beef package size, stew meat, soup bones, and other specialty cuts.

Please fill out the cut sheet clearly and then send it back to us so the butcher can prepare your beef according to your preferences.
